Fumonisins

Fumonisins are a group of mycotoxins produced by certain Fusarium species, primarily *Fusarium moniliforme* and *F. venenatum*. These toxins are of significant concern in the agricultural industry as they can contaminate crops such as maize, tobacco, and wheat. Fumonisins disrupt cellular processes by inhibiting ceramide synthase, leading to severe health impacts including liver and kidney damage, neurotoxicity, and increased susceptibility to diseases. In animals, exposure to fumonisins can result in significant economic losses due to reduced feed efficiency, growth retardation, and an elevated risk of developing certain cancers. In humans, chronic consumption of contaminated food has been linked to esophageal cancer, particularly in regions with high maize consumption. Regulatory agencies around the world have established maximum allowable levels for fumonisins in foods and feeds to mitigate these risks.
